Two histories: structure, and values.
- The main undo — blocks, routing, sequences, tabs. ⌘Z, ⇧⌘Z, or the tab bar's buttons.
- Parameter Undo — knob and fader moves, kept apart so tweaking doesn't bury structural edits.
